Protein Breakfast Bites

Ingredients (per egg bite)

  • 1 egg
  • 1 slice pork bacon 
  • 2 tbsp crushed sourdough pieces
  • 1 tsp olive oil
  • Pinch salt
  • Pinch paprika
  • Pinch black pepper

Instructions

Preheat oven to 375°F.

  1. Prep the bacon:
    • Cook bacon in a pan for 2–3 minutes until halfway done but still flexible.
    • Set aside.
  2. Make the sourdough base:
    • In a bowl, mix crushed sourdough, olive oil, salt, paprika, and black pepper.
    • Scoop the mixture into the bottom of a greased muffin tin and press it down firmly to make a crust.
  3. Line with bacon:
    • Wrap the half-cooked bacon around the inside rim of the muffin cup.
  4. Add the egg:
    • Crack 1 egg into the center over the sourdough base.
  5. Bake:
    • Bake for 12–15 minutes if you want the yolk soft,
      or 15–18 minutes for a fully set yolk.
  6. Cool & serve:
    • Let rest for 2 minutes, then pop them out and enjoy.
