Ingredients (per egg bite)
- 1 egg
- 1 slice pork bacon
- 2 tbsp crushed sourdough pieces
- 1 tsp olive oil
- Pinch salt
- Pinch paprika
- Pinch black pepper
Instructions
Preheat oven to 375°F.
- Prep the bacon:
- Cook bacon in a pan for 2–3 minutes until halfway done but still flexible.
- Set aside.
- Make the sourdough base:
- In a bowl, mix crushed sourdough, olive oil, salt, paprika, and black pepper.
- Scoop the mixture into the bottom of a greased muffin tin and press it down firmly to make a crust.
- Line with bacon:
- Wrap the half-cooked bacon around the inside rim of the muffin cup.
- Add the egg:
- Crack 1 egg into the center over the sourdough base.
- Bake:
- Bake for 12–15 minutes if you want the yolk soft,
or 15–18 minutes for a fully set yolk. - Cool & serve:
- Let rest for 2 minutes, then pop them out and enjoy.
