Instructions:
1. Prep chicken: Pat dry, drizzle with olive oil and a small splash of lemon juice. Rub in 1 Italian Herb seasoning packet until coated.
2. Bake:
• Chicken thighs: 400°F for 20–25 minutes.
• Chicken breasts: 400°F for 25–30 minutes, depending on thickness (internal temp 165°F).
3. Roast veggies: Toss potatoes and zucchini with olive oil and the second Italian Herb packet. Spread on a sheet pan and roast at 400°F for 25–30 minutes, flipping halfway through until golden.
4. Finish: If the veggies look a bit dry, drizzle a little more olive oil before serving.
