Italian Lemon Herb Chicken

Ingredients:

1 lb chicken thighs (or breasts — see note)

1 Petrichor Organics Italian Herb seasoning packet

1 tbsp olive oil

Small splash of lemon juice


For the Veggies:

1 lb potatoes + zucchini (combined or separate)

1 Petrichor Organics Italian Herb seasoning packet

1 tbsp olive oil

 

Instructions:

1. Prep chicken: Pat dry, drizzle with olive oil and a small splash of lemon juice. Rub in 1 Italian Herb seasoning packet until coated.

2. Bake:

Chicken thighs: 400°F for 20–25 minutes.

Chicken breasts: 400°F for 25–30 minutes, depending on thickness (internal temp 165°F).

3. Roast veggies: Toss potatoes and zucchini with olive oil and the second Italian Herb packet. Spread on a sheet pan and roast at 400°F for 25–30 minutes, flipping halfway through until golden.

4. Finish: If the veggies look a bit dry, drizzle a little more olive oil before serving.


Result:

Perfectly roasted, lemon-kissed chicken with warm, cozy Italian herb notes — and golden vegetables with a strong savory flavor.
