Instructions

1. Cook the Chicken

Preheat oven to 400°F.

Place the chicken breasts on a baking sheet. Coat with olive oil and season evenly with the Italian Herb POD.

Bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F.

Remove from the oven and allow the chicken to cool slightly.

2. Shred the Chicken

Place the cooked chicken in a large bowl while it is still warm.

Using a sturdy whisk, press down and twist the whisk through the chicken until it breaks apart into shredded pieces.

Continue until the chicken is evenly shredded.

You can also use two forks if preferred.

3. Make the Creamy Base

Add the cottage cheese, Greek yogurt, Dijon mustard, lemon juice, black pepper, and optional honey to a blender or food processor.

Blend until smooth and creamy.

4. Make the Chicken Salad

Add the shredded chicken to a large bowl.

Pour in the creamy cottage cheese and Greek yogurt mixture. Add the celery, red onion, optional pickled onions, and parsley.

Add the optional pickles and chopped walnuts or pecans.

Gently mix until everything is evenly coated.

Taste and adjust with additional lemon juice, Dijon, salt, or pepper if needed.

5. Chill

Cover and refrigerate for at least 30 minutes before serving.

Serve cold.
