Creamy Coconut Curry Squash Soup

Ingredients:
• 1 onion, diced
• 1 squash, diced
• 1 carrot, diced
• 2–3 cloves garlic
• Olive oil
• 1 packet Petrichor Organics Thai Coconut Curry
• Chicken broth
• Parsley, chili flakes (for topping)

Steps:
1. Dice onion, squash, carrot, and garlic.
2. Toss with olive oil and the Thai Coconut Curry packet.
3. Bake until soft and slightly golden.
4. Add everything to a large bowl or blender with warm chicken broth.
5. Blend until smooth and creamy.
6. Top with parsley, olive oil, and chili flakes.
