Ingredients

Chicken Salad

  • 1 package boneless, skinless chicken thighs (about 2 lbs)

  • 1 package organic, uncured pork bacon (Turkey bacon works as well)

  • 3–4 green onions, thinly sliced

Creamy Cajun Cottage Cheese Sauce

  • 1 cup cottage cheese

  • 1 tbsp Dijon mustard

  • 1 tbsp lemon juice

  • 1 tsp honey

  • 1 garlic clove (or ¼ tsp garlic powder)

  • 1 tbsp pickle juice

  • ¼ tsp black pepper


Step 1: Season & Bake the Chicken

Preheat your oven to 425°F.

Coat the chicken thighs evenly with Petrichor Organics Cajun Seasoning POD, making sure every side is well covered.

Place the seasoned chicken thighs on a lined baking sheet and bake for 25 minutes, or until the chicken reaches an internal temperature of 165°F.

Allow the chicken to cool slightly, then chop into bite-sized pieces.

Step 2: Cook the Bacon

While the chicken is baking, prepare the bacon.
